Wake-up with Blueberry Pancakes

January 28 is National Blueberry Pancake Day

What better way to celebrate than with a fresh stack? Here is one of our favorite recipes for enjoying your first serving of fruit for the day - Blueberry Pancakes  These pancakes are terrific served fresh out of the pan. And since blueberries are frozen at their sweetest, you may not even need syrup.

This recipe can also be made ahead of time and enjoyed for a few days. Just remember to let the pancakes cool 5-10 minutes before placing in an airtight container and then place in your fridge. Later, when you’re ready to serve, they’ll be ready after a quick 30 seconds in the microwave. Simply place 1-2 pancakes on a microwave-safe plate and microwave on high, checking for desired doneness after 15 seconds.

Blueberries add flavor to pancakes and nutrients like vitamin K, vitamin C, manganese, and potassium, contributing to a strong immune system, healthy skin, and efficient digestion. Are Frozen Blueberries Just as Good as Fresh?

This time of year, frozen blueberries are your best bet for peak flavor. They have just as many nutrients as fresh berries. So, YES! Frozen blueberries are just as good as fresh! They taste great in smoothies, baked goods, and sauces. When buying blueberries from the freezer section, check out the ingredient list on the back to make sure you’re buying only frozen blueberries. Additives and syrups can cause a recipe to fall flat. Frozen blueberries can go straight from the freezer to the blender for smoothies, sorbets, and purees. Gently fold frozen blueberries into pies, cakes and muffins just prior to baking. Thaw frozen berries for use in sauces, compotes, and sandwich toppings, like in our favorite blueberry sauce recipe.

 

Warm or cold, this lovely sauce tastes terrific over whole-grain pancakes and waffles and mixed into low-fat yogurt.

 

Frozen Blueberry Sauce

Serves 12

  • 2 cups blueberries, frozen or thawed
  • 1/3 cup sugar
  • 1 tablespoon fresh lemon or lime juice
  • 1/2 teaspoon vanilla 
  1. Add blueberries, sugar, and juice to saucepan.
  2. Cook over medium heat stirring occasionally.
  3. When berries are soft enough, crush in saucepan.
  4. Turn heat to medium high.
  5. Bring to a boil and stir constantly for 1 minute.
  6. Remove from heat and add vanilla.
  7. Chill or serve after 5-7 minutes of cooling.
