Grilled Chicken with California Blend

Serves 4

  • Marinade of choice (recipes below)
  • 4 boneless skinless chicken breasts (4 ounces each)
    Note: Larger breasts can be cut in half.
  • 1 bag of frozen California Blend vegetables
  1. Place chicken breasts in a glass pan or large plastic bag.
  2. Prepare marinade of choice and pour over chicken breasts. Let marinate 30 minutes to 1 hour.
  3. Prepare vegetables according to package directions.
  4. Discard marinade and grill chicken 7-8 minutes on each side.
  5. Insert thermometer into thickest part of chicken breast and continue
    cooking until it registers 165°F.

Balsamic Marinade

1 medium tomato, chopped
1 bunch basil, chopped
1/2 cup balsamic vinegar
2 tablespoons olive oil




small container of soy sauce grouped with a piece of ginger root, red pepper flakes, and a splash of orange juice

Asian Marinade

2 tablespoons frozen
orange juice concentrate
1/2 cup water
1/3 cup rice vinegar
1/4 cup soy sauce
3 cloves garlic, minced
1 tablespoon fresh
ginger root, grated
1/4 cup brown sugar
1/2 teaspoon red pepper flakes

Citrus Marinade

1/2 lime, juiced
1/2 orange, juiced
1 tablespoon honey
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon soy sauce
Dash of pepper
