Leading scientists to discuss latest diet and exercise research at symposium

FAYETTEVILLE, Ark.— Nutrition researchers will compare notes and build collaboration in their efforts to combat obesity and improve human health during the second annual Center for Human Nutrition Research Symposium: The Science of Diet and Exercise to discuss the interplay between diet and exercise.

“With the increase in research related to exercise and nutrition within the University of Arkansas System Division of Agriculture, University of Arkansas and the University of Arkansas for Medical Sciences, this meeting serves to provide an opportunity to bring leading scientists from across the country and the area together to present the latest science related to diet and exercise,” said Jamie Baum, director of the Center for Human Nutrition and assistant professor for the Division of Agriculture.

The event will take place at the Don Tyson Center for Agricultural Sciences in Fayetteville Feb. 21-22. It is sponsored by the Center for Human Nutrition, Division of Agriculture, the Exercise Science Research Center, Arkansas Children’s Nutrition Center and UAMS. 

The symposium kicks off with a social event. Then it’s down to business on day two. Leading scientists will present their diet and exercise research, including:

  • Nancy Rodriguez, professor, Department of Nutritional Sciences, University of Connecticut: "In Pursuit of an Optimal Diet for Human Performance and Health: Protein as the Protagonist"
  • Elisabet Børsheim, professor and director, Physical Activity Core, Arkansas Children's Nutrition Center; director, Metabolism Core, Center for Childhood Obesity Prevention; Department of Pediatrics, Section of Developmental Nutrition, Department of Geriatrics, University of Arkansas for Medical Sciences: "Active Kids, Healthy Kids: Does exercise impact childhood obesity and metabolic health?"
  • Robin Shook, research assistant professor, Department of Pediatrics, Children's Mercy Hospital Kansas City: "Physical Activity, Appetite Control, and Energy Balance"
  • Erin Hickey Howie, assistant professor, Department of Health, Human Performance, and Recreation, University of Arkansas: "Move more, eat smart, and learn better? Exercise is Medicine at the University of Arkansas"

Graduate students and postdoctoral fellows conducting research related to health, nutrition or exercise will compete in a data blitz competition. Participants will present a poster and give a 3-minute “elevator pitch” about their research. The winner will receive a $200 prize. 

“The data blitz competition is a way for students to highlight the primary findings of their research in a concise manner,” Baum said. “It is fast-paced and fun.”

Faculty, graduate students, and post-doctoral fellows with an interest in nutrition, exercise and health are invited to attend the event. Registration deadline is Feb. 15.
