Eating Healthy in a Jiffy: Energy Bites

by Original Author: Amy Monk, Montgomery County | Adapted for Blog: Torrie Smith, Van Buren County

You always hear that breakfast is the most important meal of the day but for some eating breakfast can be a hassle. With these energy bites, you have breakfast or a quick snack ready to go as you head out the door. The energy bites have flaxseed and peanut butter to add extra protein to give you and your family the boost you need.

Something to watch out for when buying the ingredients, are the added sugars in the brand of peanut butter you purchase. This makes reading food labels extra important. When choosing peanut butter, look for one that has 2 grams or less of added sugar to make sure you are getting the healthiest choice for your family. Enjoy this quick and easy recipe!

Energy Bites

  • 1 cup (dry) oatmeal
  • ½ cup dried fruit
  • ½ cup peanut butter
  • ½ cup ground flaxseed
  • 1/3 cup honey
  • 1 teaspoon vanilla
Mix all ingredients in a bowl. Using a cookie scoop or tablespoon, spoon mixture into a airtight container. Store in the refrigerator.
Makes 16 balls
