Slow Cooker Fajitas

Fajitas should be fast and easy so try this new slow cooker fajita recipe today!

Little River County, Ark. –

Do you ever get home after work and realize you have nothing to cook for dinner? You look in the pantry and cannot find a way to make a meal. Then, you end up ordering fast food because by this point you are starving.  There is a new cooking club that is perfect for you! The goal of the cooking club is to get a group of people together to swap recipes, taste recipes, and prepare meals that go from freezer to oven / slow cooker to make healthy food fast!

SLOW COOKER FAJITAS

Ingredients:

1 medium red bell pepper
1 medium yellow bell pepper
1 medium green bell pepper
1 medium onion
1 packet taco seasoning or fajita seasoning
1 pound boneless skinless chicken breasts
½ cup chicken broth
*tortillas
*your favorite toppings (cheese, sour cream, guacamole, salsa, cilantro)

  1. Slice bell peppers and onions in ¼ inch slices. Add to the bottom of the slow cooker.
  2. Sprinkle seasoning packet over bell peppers and onions in slow cooker. Add chicken breasts and pour chicken broth over the top.
  3. Cook on low for 6-8 hours or on high for 3-4 hours.
  4. Remove chicken from the slow cooker and let it cool slightly. Use two forks to shred the chicken. Add the chicken back to the slow cooker and mix with the peppers and onions.
  5. Serve over tortillas (whole grain, regular flour or corn tortillas) and top with your favorite toppings.
