Freezer Breakfast Sandwiches

Many mornings we are running out the door to make it to work on time.  Have you ever skipped breakfast or lunch because you simply did not have time to prepare the meal? Do you ever run through the drive thru after you are already running late? If you take just a little time to prep meals in advance, it can save you a lot of time and money! You can also make healthier options by choosing whole grains, lean meats, low fat dairy, and healthy cooking methods.

FREEZER BREAKFAST SANDWICHES
6 whole grain English muffins
6 slices low-fat cheddar or pepperjack cheese
6 slices low-fat deli-sliced ham
6 eggs

1. Spray a muffin pan with non-stick cooking spray and preheat the oven to 350 degrees.
2. Crack each egg and place it in a muffin tin by itself. Top each egg with a little salt and pepper to taste. If you would like, you can scramble each egg, but otherwise just leave the yolk and white as it lands in the muffin pan.
3. Pour a little water in any empty muffin tins so that it will cook evenly. Bake the eggs at 350 degrees for 15 minutes.
4. Allow the eggs to cool. Meanwhile, slice and toast the English muffins.
5. Assemble the sandwiches by placing half of the cheese on the bottom half of the muffin. Then stack the slice of ham with one egg and the other half of the slice of cheese. Put the other half of the muffin on top.  Wrap each sandwich in clear plastic wrap. Store in the freezer in a freezer safe bag or container.

To reheat – microwave for 1.5-2 minutes (time depends on microwave wattage). Enjoy this filling breakfast that has all the protein you need for breakfast along with a serving of dairy and a serving of whole grains.
